Chef Alexander crafts each cake by hand with a generous amount of the finest St. Lucian white rum, small-batch, custom-fermented sweet red wine, pure butter, and delicious fruits. Chef Alexander’s not-so-secret secret is to soak the fruits in the rum and wine for two years! Once baked, her cakes rest for a full month, allowing the flavours to mellow and come together.
